I bought a bag of this and don't know what to do with it! Cut up veggies and put it in it?

    I had all the stuff to make this, but never got around to it. Please let me know if you like it!


    Quinoa Pilaf with Peas and Sage, from the New American Plate Cookbook

    1 cup quinoa, rinsed & drained
    2 cups fat free, reduced sodium chicken or vegetable broth
    1 tablespoon olive oil
    1/2 cup diced onion
    1/2 cup diced celery
    1/2 cup diced green bell pepper
    1/2 cup diced red bell pepper
    1 cup frozen peas, thawed
    1/2 teaspoon dried sage, or to taste
    2 tablespoons pine nuts, toasted

    Combine the quinoa and broth in a medium saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for about 12-15 minutes, until the broth is absorbed.

    A few minutes before the quinoa is done, heat the olive oil over medium-high heat in a large nonstick skillet. Add the onion, celery, and bell peppers and saute for 4 minutes. Stir in the peas and cook for 1 more minute. Stir in the cooked quinoa and mix well. Stir in the sage and pine nuts, season to taste with salt and pepper, and serve immediately.

    I like to put it in broth-based soups - about 1/8 cup dry per bowl you want to make. Quinoa is good stuff - a complete protein!

    ok- I bite...what is quinoa?

    is that that wheat/bular stuff?

    dice up 1/2 onion
    1/4 bell pepper
    .5 tsp kosher salt
    .5 pepper
    1 clove garlic minced
    1/2 jal if you would like it spicy
    pinch of thyme
    1 cup chick broth-low sodium
    1 cup water
    1 up rinsed quinoas
    bring to boil and cover turn to low and cook about 25-30 minutes.
    That is my fav!!!!!

    I forgot-cook the all the above less the quinoas and the liquid in about 1 tsp of olive oil to tender the veggies a bit.

    oh I looove quinoa! It's used like & referred to as a grain (and flour can be made from it) but it's technically a seed from a plant from the spinach family. It's incredibly high in available protein, has a wonderful nutty quality to its flavour and the texture is really nice. I love making a tabouleh-inspired greek salad with quinoa, chopped fresh basil, lemon or lime juice, olive oil, chopped tomatoes, cucumber, red onion and sometimes a little light feta. It's wonderful on its own or can be scooped up with a whole wheat pita. YUM! The Incas relied on it for much of their nourishment. :happy:
