Easy Black Bean and Ham Soup in the Crock Pot

My finance raved over this recipe. It is yummy, very filling, and packed with protein. Perfect for a big group meal or to divide into containers for lunches/dinners throughout the week. Hope you enjoy it as much as we do!

Ingredients:
4 cans black beans
2 cans low sodium fat-free chicken broth
6 tsp minced garlic (fresh or prepared in jar)
1 onion, diced into small pieces
2 cups of ham (you can add more or less. I often used what's left over from a ham dinner)

Optional: 1tbsp of horseradish (I have never tried it, but the original I tweaked had this suggestion)

Directions
Combine all ingredients in crock pot and cook on low for 8 hours.

Makes 9-10 1 cup servings

When entered into MFP recipe calculator,
1 serving = 272 calories, 45 carbs, 4 fat, 26 protein

(The carbs are mostly from the beans, so they are good carbs)

    I make this same thing with great northern or white beans. Never thought of trying it with black beans! Sounds yummy!

    What does BUMP mean, and Thank you I am going to have to give it a try. I love beans but my husband doesn't but frankly,i am getting sick of chicken everynight.

    I am going to give this a try tomorrow- I am not supposed to have deli ham BUT I think a few pieces won't hurt too much--I just hope my husband likes it he isn't in to healthy eating!

    I tried this over the weekend. Had to make a few adjustments but it was a winner. Out of 6 people in the house only my pickey eater didn't care for it but she still ate some. I changed the beans to 2 black beans and 2 cannellini beans and reduced the garlic. way to much for our taste. Other than that, if was delicious.

    Like a lot of soups this has higher sodium levels. I did use lower sodium broth, but most of the sodium comes from the beans and the ham. If you drain and rinse the beans you might cut back on the sodium some. Any how, if you get 9 cups of soup out of the recipe, 1 cup = 1389.

    An idea for cutting the sodium would be to use dry black beans.
