Great low cal but very filling soup! Cauliflower and stilton

I was over at my sister's place last weekend, and when family come round my brother in law likes to show off in the kitchen. When he announced that we were having a starter my hopes for hitting my calorie target were dashed, however he'd inadvertently picked a recipe which is not only delicious and very filling but also very low cal!

If you don't like stilton - I'm not a huge fan although this recipe is quite delicate on the stilton flavour - I reckon you could substitute it for mature cheddar or similar.


Serves 6, 183 calories a serving


Ingredients:

Half oz butter
1 onion, chopped
1 whole cauliflower broken into florets
1 pint vegetable or chicken stock
1 sachet bouquet garni (or mixed herbs if this is hard to find)
Salt and pepper
1 tablespoon cornflour
Half pint milk
4 oz blue Stilton, crumbled
Chopped parsley to garnish


Method:

Melt the butter in a pan, add the onion and fry until soft. Add the cauliflower, stock, bouquet garni and salt and pepper to taste. Bring to the boil, cover and simmer for 15 minutes; cool slightly.

Remove the bouquet garni. Sieve or process in an electric blender until smooth.

Blend the cornflour with 2 tablespoons of the milk. Add to the puree with the remaining milk. Bring to the boil again, stirring.

Remove from the heat and stir in the cheese.

Pour into warmed individual soup bowls and garnish with parsley. Serve immediately.
