Cauliflower Pizza Crust?

I saw a post yesterday about Cauliflower pizza crust and thought it was a good idea so tried it today. It tasted pretty good...I actually had the whole pizza (only way you can have a whole pizza for less than 500 cals LOL) because I had calories to spare... 2 things I didn't like:
1. "Pizza" is not crispy as I like it... does anyone have a tip on how to make it crispier?
2. Because it has a loooot of cheese it is high in fat...does anyone know any substitution, or something else I can add to reduce the amount of cheese?
It is 1 cup of cooked Cauliflower riced, 1 cup of mozzarella cheese and some herbs...
Has anyone made this?

It was going around on MFP a while back so I gave it a try.

All I can say is, "eh."
I made mine with Veggie Shreds cheese substitute and a few tbsp of parmesan for bite. Wasn't impressed by the texture, but then tried to make it again (a) very small- about the size of an english muffin; and (b) baked it face up until the bottom got brown, and then flipped it like a pancake and baked it again before I added any sauce or toppings.
It came out much better--satisfyingly crispy-- but honestly, I concluded that pizza really isn't that much of a craving for me to begin with; and for all the work, if I really want cheese and sauce on some bread, I'd rather have a couple of tbsp of spicy tomato sauce and some parmesan and garlic on a piece of Alvarado Street Bakery Essential Flax Bread (50 calories).0 -

i use about 2 cups of cauli rice and only about 1-2 oz of cheese. i just play with it everytime i make it.... try baking it and flipping and baking more before putting the toppings on?0 -
I have never made it, but it sounds very interesting! I'm excited to try it!0

I baked it without toppings but will try flipping it next time, and will definitely add more cauli/remove cheese.
Pizza IS a problem for me and this really satisfied my pizza craving plus I get some veggies in it.... also a good way for my kids to eat their veggies0 -
