Cranberry-thyme crusted salmon

I just made this for dinner and it was so delicious! The crunchy topping helps with the blah texture of the salmon (that's my opinion at least)

4 4-5 oz. salmon fillets
3/4 c. plain panko bread crumbs
1/4 c. dried unsweetened cranberries, chopped
1/4 c. chopped green onion
2 tbls. olive oil or melted butter (divided)
2 tbls. chopped fresh thyme
2 tsp. grated lemon peel
2 tbls. dijon mustard

Preheat oven to 375. Cover cookie sheet with foil and spray with cooking spray. Place fillets on foil sprinkle with salt and pepper and spread with dijon mustard. mix the rest of ingredients together (except 1/2 tbls. olive oil/butter) evenly top each fillets with bread crumb mixture. Drizzle with remaining oil and bake for 17-20 min. Until salmon is opaque in center.
