These are my go-to recipes. I have tried and I make all of them on a regular basis. I am a very picky eater. I am the type of person to cook homemade and gourmet on a daily basis. Trust me, these recipes are amazing. Hope this helps.
Ellie's Ribbon Pasta: 490 calories for 2 cups.
This has a huge serving for under 500 calories. I love this dish and the Zucchini makes you feel like your eating more pasta then you actually are.

Ellie Zucchini Crisps: 105 calories
This is a great side or snack

The best Beef Kabob Marinade...ever. calories: varied calories but very low
I only use 1/4 cup of oil instead of the 1 cup it calls for. I add 2-3 bell peppers, onions and Zucchini which makes it a very low cal dish.

~~~~~New Potatoes, Pearl Onions and Green Beans~~~~~275 calories per serving.
This is a super easy recipe that makes you feel like your eating a bunch potatoes but you are obviously not. 4.0 oz new potatoes cut in half or quarters, 2.5 oz pearl onions, 5 oz cup frozen green beans and 1/2 tbsp. butter per serving. Add the onions and potatoes in a bowl, salt and pepper to taste. Cover with saran and microwave on high for 5 minute. Add the frozen green beans and recover. Cook on high for another 5 minutes.(tCheck them every 2.5 minutes because microwaves vary in cooking times) Mix and season more if needed. I have also added fresh herbs if I have them laying around. Chives work very well.
I forgot to post a recipe we tried last night. This one is not for the faint at heart. It is pretty spicy and flavorful but my husband and I really liked it and it will make its way into our recipe book. Again, if you like milder type foods, this is not for you. LOL
Thanks for the great recipes! I have been looking for more food my fiance would enjoy as well. He likes his high fat and calorie foods and some of these sound like they will taste high in fat and calories without actually being high in them. I am super excited for the lettuce ewraps.0
Another recipe:
Grandmothers Cabbage Casserole
1 Medium Cabbage chopped and rinsed
1 lb Ground beef
1 Can of onion soup
1 can rotel tomatoes
2 cans tomato sauce
1 cup raw rice
2 eggs well beaten
½ cup cooking oil
1 large onion chopped
1 bell pepper finely chopped
salt pepper to taste
Bread crumbs (to top) optional
Cheddar cheese (to top) optional
Mix all the ingredients together by hand. Add the mixture to a greased 13x9 deep baking pan. Sprinkle with bread crumbs. Bake at 325 degrees for for 2 hours. Add grated cheese and melt on top. Enjoy.
If my calculations are correct, it has 352 calories for 1/6th of a pan.0 -
