Turkey Fajita Wrap
Options
I've been craving fajitas but I didn't want to buy the package powder mix cuz god know what they put in there to preserve it...so I made my own! It's a great way to use ground turkey and the mixture itself is only 191kcal! So you can choose a wholemeal wrap or just lettuce cups for a low carb option.
Serves 5ppl
191kcal per serving (mixture)
355kcal per fajita wrap (I used Discovery Multiseed Wrap, 165kcal each)
Ingredients:
500g lean turkey mince
161g red bell pepper
1 tsp olive oil
Fajita powder:
1 tsp rock salt
1/2 tsp black pepper
1/4 tsp celery salt
1/4 tsp onion powder
1/4 tsp garlic salt
1/4 tsp cayenne pepper (you can add more if you like spicy)
1/4 tsp cumin
1/2 Knorr chicken stock cube
1/2 tbp corn starch
It is best to use a non-stick pan to cook this so you don't use so much oil.
Prep:
Cut the red pepper into small cubes. Make the fajita powder. Put all the spices in a small bowl and make sure it's all incorporated. Heat a saute pan with 1 tbs of olive oil at medium. stirfry the bell pepper for about 1-2 minutes. Then toss in the turkey mince. Cook the mince for about 2 -3 minutes, just a little undercooked. Throw in the fajita powder and stir it all in. Let it cook for an additional 1 minute and voila!
You can make the mixture and store it in a tight jar and you can use this to coat any meat!
For my lunch, I take 100 gram of the fajita mix, 5 leaves of iceberg lettuce all wrapped in a multiseed wrap. Totally yum!
