A Recipe Challenge!

I am NOT a fan of leftovers and rarely eat them. I do however take the food I make and try to come up with something new. So my challenge for you is to figure out how to make something new with your leftovers. Post the original recipe here and then your altered recipe under that. All recipes must be healthy and within some diet plan.

    Rotisserie Chicken- Had this for lunch yesterday.

    Todays lunch:

    Rotisserie Chicken Salad

    3oz rotisserie chicken
    1 tbsp light miracle whip
    0.5 tbsp sugar free pickle relish
    0.5 tbsp chopped onion

    Mix together and serve on whole grain bread.

    Per Sandwich using hartfords whole grain wheat bread.

    Tomorrow for dinner:

    Chicken Noodles

    rotisserie chicken boiled down with bones removed and meat picked clean
    no yolk egg noodles
    organic chicken stock
    3 low sodium chicken bouillon cubes

    Boil chicken off the bones and reserve meat. Boil noodles in stock and bouillon until almost done. Add chicken back and continue to boil until noodles are as you like them. Serve with choice of veggie. I mash up a small potato with light margarine to serve under it.

    Per 1 C. serving
    cals: 194 carbs: 5 fat: 10 protein: 20
  • What a great idea!!

    I often make a tomato based veggie mince sauce for pasta (passata, garlic, mushrooms, veg stock, veggie mince, onions) and then the next day i will use the leftovers and add red kidney beans and chilli powder to make a chilli sauce to go with rice.

    That sounds great!

    I am currently working on a use for leftover oatmeal. Ill post back if it turns out good. Smelled awesome!

    The leftover oatmeal bars are quite interesting. Here is the recipe. Tweak it as you like.

    Sinnamon Chocolate Oat Bars

    2 cups of cooked plain oatmeal
    2 tbsp brown sugar
    1 tbsp cinnamon
    1 tbsp peanut butter
    1/8 c. brownie mix
    1/5 c. applesauce
    1 large egg

    Preheat oven at 350 degrees.

    Mix all ingredients together. Spray cookie sheet with cooking spray. Turn ingredients out into 5 separate piles. Spray hands with cooking spray and form oat piles into bars. Bake for 20 minutes. Cool and serve.

    Each bar is

    189 cals
    31 carbs
    5 g fat
    6 g protein

    Note: I think this would be better with a honey glaze baked in like they do with granola bars. Also I would like this to be dryer like an oatmeal bar. Perhaps turning it after 20 mins and letting the other side crisp up would accomplish this. Im sure I will have leftover oatmeal again at some point. :D
