Try this:
Remove bottom 1/3rd of the spears. Cut remainder on a slant, about 1-1/2 long. Place in a bowl and add 1 tbsp olive oil, zest of 1/2 lemon, 1 tbsp minced garlic, 1/2 tsp oregano and kosher salt and fresh pepper to taste. mix well.
Heat non stick skillet over med-high heat. Add asparagus and saute until just tender, about 5 minutes. Remove from heat and set aside.
On a small plate, mix fresh baby arugula and thin slices of baby spinach. Mix 1-1/2 tbsp olive oil, 1 tbsp white wine vinegar, 2 tsp.minced fresh tarragon and a dash of lemon zest. Top greens with the asparagus and pour dressing sparingly. Top with thin shaves of good parmesan or good gruyere.0 -
I grill mine. Coat lightly with Grapola grape seed oil (sweeter than olive oil), sprinkle on some crushed sesame seeds, grill 2-3 minutes, serve and enjoy!0
