    How about just grilling it (outdoor or George Foreman) and serving with dijon mustard? That's about as low-cal as it gets, I think (and delicious, IMHO).

    I made chicken tonight from the Southbeach book. 2 tbs. olive oil on medium high and put 4 chicken breasts in for 3 minutes, take a whole onion slice it. Flip the chicken add the onions and cover for 4 more minutes. Then add 2 cloves of chopped garlic and 1/2 C FF low sodium chicken broth, cover for 5 minutes and serve. Delish and quick!
