75 calorie meatloaf

Makes 6 (150 calorie) servings or 12 muffins (1 serving=2 muffins) at 75 calories each
Ingredients:
1 pound ground beef or ground turkey
1/4 cup chopped onion
1/2 cup unsweetened applesauce
1/2 cup oatmeal, uncooked
1/4 cup plain panko bread crumbs
2 Tablespoons of ketchup or tomato sauce
1 large egg, beaten
Salt and pepper
Directions:
1. Preheat oven to 350 degrees.
2. Mix all ingredients together.
3. Spray a loaf pan or 12 muffin tins with nonstick cooking spray.
4. Place meatloaf mixture in loaf pan, or divide equally between muffin tins (not completely full).
5. Cook loaf for 50 to 60 minutes, and the muffins for approximately 25 minutes.
With tomato sauce and 99% ground turkey, 1 muffin is 75 calories, or 1 slice of a loaf (6 servings) is 150 calories.
So delicious and low calorie!

Sounds TOTALLY fab..... did you use reg oatmeal or the quick oats??
