Favorite egg recipes

I just made myself a fantastic breakfast, and was wondering what others of you do with your eggs to spice things up. I made scrambled eggs with roasted red and yellow sweet peppers, I sprinkled some McCormicks garlic and basil seasoning, and pinch of sea salt and topped it with a roasted salsa. It was awesome!

  • I use egg beaters but today I made them with some fat free feta, tomato, and basil and threw it all in a tortilla. I also love to make scrambles with veggie sausage and bell peppers. Or veggie burger patties and reduced fat or fat free shredded cheddar. Sometimes I'll make a breakfast sandwich on a light english muffin. Someone here said they microwave the egg beater for a minute and 30 seconds in a coffee cup and then they are the perfect size/shape for an english muffin. I do that sometimes with veggie sausage pattie and some cheese. Yum.
  • I use egg whites that I buy in a container. I mesaure it out according to serving size. I add some diced ham and low fat shredded cheese! Makes a great omlet. My youngest likes them as well so sometimes we share!

    One of my favorite morning egg dishes is sauted spinach topped with a poached or over-medium egg. I either use Pam or very little olive oil to saute the spinach first and then cook the egg. My other is similar to yours below but I will add about 1/4 ounce of cheese -- any type -- muenster, jack, mozzarella, parm, romano, etc . I will have to try the McCormicks next time.
