Glazed Pork Chops With orn Bread Stuffing

This is from Taste of Home's Healthy Cooking. I will advise that I didn't have the mustard the first time I made it so I used the rest of the chicken broth mixed wih brown sugar to coat the pork chops. Worked just fine and made the chops kind of sweet..
GLAZED PORK CHOPS WITH CORNBREAD STUFFING
1 1/4 cups reduced sodium chicken broth
3/4 cup chopped onion
1 celery stalk, chopped
3/4 cup frozen corn
Dash cayenne pepper
3 cups corn bread stuffing
6 boneless pork chops*
1/2 cup brown sugar
1/4 cup spicy brown mustard**
In a large saucepan, bring the broth, onions, corn, celery and cayenne to a boil.
Remove from heat and add stuffing. Transfer to 13 x 9 pan coated with cooking spray.
Combine the brown sugar and mustard and dip chops in and place on top of stuffing. If you have extra, spoon on top of chops.
Bake uncovered at 400 degrees for 25-30 minutes, or until a meat thermometer reads 160 degrees.
* Since thin sliced boneless pork chops are cheaper, I bought those (8 in the pack) and used those. Still cooked it for 30 minutes though.
Also - I used the Walmart brand of the corn bread stuffing. They had it in a box for about $1.12. The box contains exactly 3 cups so that was great!

Stuffing is one of my favorite things, and with the chicken broth and corn, it is really moist and delicious.0
