Raw Zucchini Spaghetti with Marinara and "Not" Meat Balls

So I ordered a spiral slicer (only $30 on Amazon) and a Raw Cookbook that just came in a couple days ago. I tried my first recipe last night and it was unbelievable!!!! I ate a low calorie breakfast and lunch so I could afford to eat the recipe to its entirety (I even had enough left after dinner to have a Vita Top Deep Chocolate Muffin and a real fruit bar for desert), although you could make it lower calorie by using less of the "Not" Meat Balls. It was so delicious I just had to share it with you guys!!!! :D

Raw Marinara (makes 4 servings- 335 calories per serving)

3 small tomatos (513 g) 92 calories
1 red pepper (173 g) 45 calories
4 TBS olive oil 480 calories
Fresh Thai Basil (13g) 4 calories
2 tsp Dried Oregano 6 calories
3 cloves Garlic 13 calories
7 oz oil soaked Sundried Tomatoes 700 calories

Put all of it the food processor and done!


“Not” Meat Balls (makes 4 servings of 3 not balls each- 375 calories per serving)

2 cups walnuts (214g) 1400 calories
2 TBS fresh lemon juice 6 calories
2 tsp olive oil 80 calories
2 tsp Bragg’s Liquid Aminos (optional) 0 calories

Put all of it in the food processor until it is a paste. Transfer to a mixing a bowl and add:

10 sprigs of Italian Parsley chopped 4 calories
2 TBS sweet onion chopped (25 g) 8 calories
6 TBS of the Raw Marinara ( I counted the calories in the last recipe so I didn’t here)

Mix well and roll into 12 “not” meat balls.


Serve one serving of Raw Marinara and one serving of “Not “ Meat Balls over half a large zucchini (117 g) 19 calories, cut with a spiral slicer to make zucchini spaghetti. For a total meal of 728 Calories. Or serve with one serving of Raw Marinara for a total meal of 354 calories. Or use less “Not” Meat Balls, they are 125 calories per “Not” Meat Ball.
