Chinese Fried Rice?

A few weeks ago I found a recipe on here for Chinese fried rice...I had bought all of the ingredients and was planning on making it tonight. It slipped out of my 25 recent topics though and now I can't find it! I can't remember exactly what was in it either, but I know it called for Egg Beaters. Anyone remember this or have a good Chinese Fried Rice recipe that is relatively easy to make? Thanks!

    I'll tell you how I make fried rice, then you adjust to your version of "better"

    Cold white rice (supposedly day old is great)
    butter
    soy sauce
    diced carrots
    peas
    onion
    green onion
    pepper
    chopped up scrambled egg (guess you could use egg beaters instead)

    -put butter in fry pan, add rice. Let rice cook a little to reheat, add veggies & egg. Toss around to mix veggies in. Add soy sauce and fresh black pepper - to taste
    -garnish with chopped green onion

    I know that this isn't what you asked for, but I make "fried rice" using spaghetti squash. I take spaghetti squash and use it instead of rice. Low calories --- just a thought.
