Yummy and Healthy Soup Recipe

Made this for supper the other night and it's really yummy!

Sweet Potato Minestrone

1 Large Sweet Potato , cubed (About 4 1/2 cups)
900ml Reduced Sodium Chicken Broth (beef or veggie works too)
1 1/2 Cups water
1 Cup Onion, chopped
2 Cloves Garlic, minced
1 Tsp Italian Seasoning
3 Cups Green Cabbage, shredded
1 1/2 cups Catelli Smart Rotini with Fiber Pasta
1 1/2 cups Frozen Peas

In a soup kettle, combine the broth, water, sweet potatoes, onion, garlic and Italian seasoning; bring to a boil. Reduce heat; cover and simmer for 10 minutes.
Return to a boil. Add the cabbage, pasta and peas; cook for 8-10 minutes or until the pasta and vegetables are tender.
Makes about 7 servings.
