dairy & soy free diet

My son is having a number of GI issues, and since I am breastfeeding they are having me try a dairy and soy free diet to see if this helps him.
I didn't realize how much dairy there is in things. any suggestions of ways to make up calories that aren't all meats and starches? I have preplanned a few meals, and with the breastfeeding calories gone, it seems like I have to eat like 10lbs of veggies to get enough calories....even with my goal of losing 2lbs a week.

how about nuts, seeds, avocados, beans, fruit?0

I can't have any dairy except skim milk--I have just been eating a lot of protein and veggies--Brown rice is a good way to get some calories as well--I eat nuts almost every day and fruit as well--Good Luck0
