Well, we had the tastiest supper tonight. I'm LOVING all of these new options I'm coming up with! We had gourmet sandwiches. I made an amazing cilantro hummus (1 can chickpeas, 1/4c water from can, 1 T lemon juice, 2 cloves garlic, 1 t tahini, 3 T fresh cilantro, 1 T olive oil) which we spread on the bread and the sandwich filling was grilled red & orange peppers, zucchini, mushrooms, onion & garlic. We grilled them on the BBQ and the flavour was AMAZING with the cilantro hummus.

NOTE: hummus is a GREAT way to have mayo or other spread alternatives. You can make basic hummus and add any fresh herb or roasted peppers or other roasted veggies... It's a phenomenon :tongue:

The sandwiches were FILLING and under 350cals for the meal!!!

    OH... I love hummus. I never thought of putting cilantro in hummus... that sounds so good. I am going to try this!

    We had a bunch of extra cilantro in our herb garden so I gave it a try... It's wonderfully fresh - great for summer heat! Ah food... so nice to be able to enjoy it when you know it's the right stuff for your body :tongue:
