Low Fat Lemon Cheesecake

I got this recipe from weight watchers a few years ago and whenever I am on a diet, I make it as it's delicious but not as fattening as normal cheesecake.
I guess you can deviate from the ingredients I use and substitute as you so wish but I always do it the same way and its lush.
I cant remember the points value per slice but I seem to remember it wasn't really high.

70g Low Fat Spread (Butter)
200g Crushed Low Fat Digestive Biscuits (I have wondered about substituting these for ginger nuts perhaps but I think they might be quite fatty)
500g Natural Yoghurt
1 Tin of Condensed Milk - I use the Regular l one as its not a huge variation in calories from the Light one.
Fresh Lemon Juice
Lemon Jelly

Melt the butter in a pan and mix with the crushed biscuits. Place in the bottom of a dish and crush as flat as you can to make a base. Place dish in fridge until the biscuit base is cold and has set.
Melt jelly in boiling water. I always fill 1/4 jug full and wait for jelly to dissolve.
Mix the yoghurt and condensed milk in a bowl and add the lemon juice. Once the jelly has melted, add the mixture to the yoghurt mix and stir well.
Taste as you go as some people may prefer it to be stronger in a lemon taste to others.
Pour yoghurt mixture over the biscuit base and place in the fridge to set.
It usually takes mine about 4 hours to fully set.
Serve with fruit or sauce or however you like it! Yummy cheesecake without all the nasty calories!!!

    Yum. I have to admit that I've currently got a packet of ginger nut biscuits on the go and every now and again I make the laziest, quickest version on cheesecake you'll ever get... I just spread the biscuit with a little bit of mascarpone cheese and a little bit of lemon curd. hehe, naughty but nice :o)

  • no worries - its no expensive to make either as you dont have to have branded stuff - just trial and error really....... I guess you could also use strawberry jelly and dice fruit to put in it also..... in fact I may just try that!

    They are completely english lol (I think!) They are just basically plain biscuits. Can be eaten with sweet or savoury stuff.............. Maybe a plain cookie in America? Just a biscuit thats low fat and has not much sugar in - the yoghurt and condensed milk make it sweet anyway. Im just not sure what an alternative would be in america!!

    Yes, make up the jelly as normal - I use a jug......boil the water and melt it and then once the crust on the cheesecake is set in the fridge, mix the jelly with the yoghurt and condensed milk and lemon juice, then add to the base.

    In America though I think you call our Jam - jelly......I mean the jelly cubes that you pour water onto and set in the fridge - the kind that some people put into trifle........

    I just actually had a slice and it was lush!!!
    I guess its still alot of calories for your body but MUCH less than normal cheesecake!

    Definitely try and have fat free biscuits/graham crackers and use the lowest fat natural yoghurt that you can.

    You could cut the butter entirely by making individual portions in glasses, and putting crushed amaretto biscuits at the bottom.
