Turkey Bacon Wrapped Egg Muffins

Makes about 18 muffins: (can be refrigerated or frozen and reheated in microwave)
36 slicese of turkey bacon (two pieces per muffin) You will need to buy two packages since there is about 22 per package.
3 cups egg beaters original
9 Jimmy Dean turkey sausage links (1/2 link per muffin).
(you can also mix whatever other ingredients you want, sauteed veggies, cheese etc.) but these extra ingredients are not a part of my calorie count, so make sure to add the calories in!
Cook bacon until almost done, and line each cup of a muffin pan with two slices, making a yummy "wall" of bacon that will surround the egg mixture.
Poor egg beaters evenly into 18 cups (about 1/2-3/4 full) egg mixture will rise so don't over fill!
Crumble half a link of sausage into each cup.
Bake for 30 minutes @ 350.
These freeze well, and can be re-heated. About 30ish seconds in the microwave. Perfect for on the go breakfast!
Calories: 110 per muffin if you make 18 muffins. If you make fewer muffins using the same amount of ingredients then you will have to of course change the calorie counts.
Vegetarion option: NOTE*** You do NOT have to have the turkey wrapping the egg mixture, the egg mixture can be put in the cups by themselves and will cook just the same. I just happen to like having the extra meat/protein. You can then mix in whatever veggies/cheese you want instead of the turkey sausage like I use.
