Organic food without labels, what to do then?

I'm trying to buy more organic stuff so went to our local organic shop today looking for a seeded loaf. There were loads I like but there were no labels of nutrition value. They looked like they were homemade and fresh out of the oven and I really want to get them but I have no idea how to log them into the system. Anyone has this kind of problem? If so, what would you suggest I do?
