Dinner Help!
Hi everyone,
It is my night to cook dinner for Mum and Dad,
I am going to make Jillian Michael's Grilled lemon chicken,
I am going to serve it with some grilled sweet potato slices and blanched and grilled asparagus.
and I was thinking of serving it with cannellni beans but not sure,
Does any one else have any ideas of how I can prepare the beans or other suggestions for vege sides (pref 2 veg and a carb/starch)
and here is the recipe if anyone was interested
GRILLED LEMON CHICKEN. SERVES SIX
INGREDIENTS
1TSP LEMON ZEST
1 LEMON JUICED
1/4 CUP FRESH CHOPPED BASIL OR OREGANO
1 TBS OF HONEY
1 TBS DIJON MUSTARD
2 CLOVES GARLIC CRUSHED
1/2 TSP SALT ( i cut this down to a 1/4)
1/4 TSP BLACK GROUND PEPPER
1/4 CUP EVOO
6 BONELESS CHICKEN BREAST HALVES (4-5 OZ EACH)
1/4 CUP PITTED KALAMATA OLIVES, HALVED
COOKING SPRAY
PREP:
To prepare dressing whisk together the lemon zest and juice, basil/oregano, honey, mustard, garlic and salt and pepper. While whisking constantly add the oil in a slow stream. Set aside.
Place chicken in a shallow baking dish (just enough to hold it not too large) Pour half of the dressing (about 1/3 cup) over chicken and toss to coat, cover a refrigerate for at least 2 hours and up to 8 turning at least once(it is ok if it is less the flavours are just not at strong, I have left it for an hour before and was still yummo!)
Stir in the olives to the remaining sauce
Heat grill (pan or gas or charcoal bbq) to med-high and spray with olive oil spray
Discard marinade on chicken and grill chicken untill opaque (5-6 mins either side depending on thickness of chicken). Place on plate and drizzle with remaining dressing
