If you eat bison...what's the best way to season and cook it?? Having it for the first time tonight..and don't even know how to season it? Treat it like hamburger meat??

    Quite comparable to beef, but leaner. This can sometimes make it a bit tougher depending on the cut of meat. I think your seasoning would be very comparable to how you season beef. A little course ground sea salt and course ground fresh pepper would probably do it for me.

    One very important thing you have to remember about bison is that it has a lot less fat than traditional hamburger so if you do make burgers out of it then you want to be sure not to overcook it or it will be very dry and not tasty. I made bison chili a couple of weeks ago with the ground bison I had in the fridge. You can basically use it as a substitute for anything you'd normally make with hamburger. Just keep in mind not to overcook the meat.

    I generally use a sodium free blend of seasonings for most of my meats.

    i would go w/ a moist/wet cooking method. its extremely lean therefor i can get extremely dry....quickly. if you dont wanna make a chili or soup type meal or braising it in wine or stock, i recommend cooking it on high heat and quick and serving it mid rare for juiciness,if its steaks. if its ground bison, use it in place of any other ground meat jsut dont overcook it. hope i helped. and if you need any more healthy recipe ideas or quick chefy tips.......im your gal. yes, i studied food and have a culinary degree. c/o '98:bigsmile:

    Thanks guys.....

    I had it last night.....I used sea salt and pepper on it....and cooked in on an indoor grill......I only cooked it until it was a little pink on the inside..... I enjoyed it with a little onion and mushroom......

    I cooked 93/7 lean hamburger for the rest of the family.....and in the taste test......my husband loved the bison......he wants to use it all the time now.....not sure if we can fit that much into our budget....but we will see!!!!
