Vegan in need of more calories!

Hello all! I am a 25-year-old new vegan (started 6 weeks ago). I am 5'0" and 107lbs. I run 3x a week and do pilates 2x per week. I work in a medical office so I'm not super active during the majority of the day. My recommended daily calorie intake is 1200 calories. I've been noticing that I am usually 200-300 calories below my targeted intake on the days that I don't excercise and I eat 6 meals a day. On the days that I run I am waaay below my calorie intake. I also noticed that I am over my recommended sugar intake (I eat only 2 servings of fruit a day and 2 servings of soy). Does anyone have any recommendation on how to get the calories that I need without throwing my carb/sugar/fat/protein intake out of whack?

    Nuts, seeds, and beans! Maybe spread some hummus on a sandwich or wrap, make a snack mix of flaxseeds, pumpkin seeds, sunflower seeds, etc., Add peanut butter to well... anything (peanut butter, and actually every nut butter is good stuff.)

    There are also some whole grains that are great for weight loss and fiber intake but also provide a higher concentration of calories. These are things like brown rice, bulgar, couscous, qunioa, etc.

    My go-to snack for refueling and getting more calories in is whole wheat toast spread with peanut butter and a glass of soy milk.

    I am very new to this whole vegan thing but i usually go for a handfull of nuts, they have fat but its a healthy fat and i realized that i probably wont stick to exactly what mpf says i should be at every day, i also think thats a guideline because everybody is different and has different needs.
