Chocolate Cake Ideas Please

My father in law's birthday is this weekend. I volunteered to make the cake. Basically so I know how many calories will be in it.

Does anyone have any light chocolate cake recipes that don't taste light?

    You can try replacing the oil with apple sauce... that's what I do and I think it tastes good :)

    I know it's not cake but check out No Pudge Brownies. Fat free, super delicious.

    Try Google and type in low calorie or light chocolate cake.

    I would highly recommend lookin up a gluten free recipe. Gluten free foods are like guilt free foods. I've eaten gluten free chocolate chips cookies and they are sooo delicous. You can't tell the difference.

    Instant chocolate cake mix with 12 oz diet coke or coke zeroa

    Ingredients 1 box instant chocolate or devil's food cake mix
    12 oz diet coke or coke zero
    Directions
    1.Pour 1 box chocolate instant cake mix into a bowl


    2.Stir in 12 oz of Diet Coke of Coke Zero


    3.Can be put into one pan for rectangular cake, round cake, or can be poured into muffin pan for cup cakes


    4.Bake at approx 350 degrees for approx 35 - 40 mins


    5.Nuts can be added as desired, will affect nutritional value


    6.Calories 170 per serving


    You can do this with any cake mix/diet coke combo. White cake mix with diet sunkist, or strawberry cake mix with diet 7 up. It's different!!!

    1 chocolate cake mix
    1 can diet coke (I usually use Diet Dr. Pepper just because it's MY drink of choice..lol.)
    (I also added an egg white to keep it from falling apart so easily - that's optional though!)

    Mix and bake as directed.
    Cool and add fat free cool whip.

    Here is what I used for my son's birthday this year -- 1 slice (1/16th of cake) is 290 calories and that includes the ice cream! I used good ice cream too, so you could probably use a lighter ice cream or frozen yogurt and have it be even fewer calories.

    They make chocolate angel food cakes that should be the same as a regular angel food cake, or close to the same.
    And, I'm sure allrecipes or cookinglight have a few recipes.

    Does he know that you plan on making a "light" birthday cake? LOL I know some people who would be like "Bish, this is my birthday!" Heck, I love birthdays so depending on my mood at the time I may be like , "Bish , you'd better go to the bakery and get me a real cake!".

    Some people use 1 box of cake mix with 1 can of pumpkin pie filling to cut out the oil milk or w/e. After reading comments on the link I pasted, a lot of people did add a few eggs. I tried it with chocolate cake mix and honestly, I didn't like it. I have heard that if you use spice cake mix it turns out much yummier. I think I might try it again and see how it turns out. Maybe make a trial run at this? Just an idea. :)

    my sister cooks vegan and she once made a vegan chocolate cake that was AWESOME. try looking up a vegan recipie.

    I have never thought of gluten free as guilt free. Some of the gluten free products I see in stores are just as high in calories as the "regular".

    You can also use a can of diet coke with a box of cake mix. Different texture, but we like it.

    2 cups flour
    1 cup sugar
    1/2 cup cocoa
    2 teaspoons baking soda
    1/4 teaspoon salt
    1 cup Fat Free Mayonnaise
    1 teaspoon vanilla
    1 cup cold water

    Preheat oven to 350°F.
    In a mixing bowl, sift together flour, sugar, cocoa, baking soda and salt. Add vanilla, mayonnaise and water. Beat until smooth.

    Pour batter into a greased and floured 13x9-inch pan.

    Bake until a toothpick inserted in center of cake comes out clean (about 30-35 minutes).

    My SIL gave me her vegan chocolate cake recipe - YUM! Personally I would not eat any cake mix and don't think you are doing anything for your long term health by buying a cake mix and putting diet coke in it - that is garbage not food.

    If you are going to eat, eat real food just eat a smaller amount. I like the website www.eatingwell.com for a lot of healthier baked goods.

    I will try to copy my SIL's recipe from my recipe database here:

    Gold Medal - Unbleached All-Purpose Wheat Flour - White, 3 cup 1,200 264 0 36 0 0
    Hershey's - Special Dark Cocoa Powder, 6 Tablespoon 60 18 0 6 12 390
    Baking soda, 2 tsp 0 0 0 0 0 2,517
    C & H - Pure Cane Sugar - Golden Brown, 2 cup 40 11 0 0 0 0
    Heinz - Distilled White Vinegar, 2 tbsp 4 0 0 0 0 2
    Mccormick's - Pure Vanilla Extract, 2 tsp 24 2 0 0 0 0
    Water - Municipal, 2 cup (8 fl oz) 0 0 0 0 0 9

    Mix dry ingredients together (flour, cocoa powder, baking soda and brown sugar) make 3 holes in the flour mix and add the liquids. Mix well and divide into two 8 or 9 inch round pans that are greased and floured. Bake at 350 for 30 minutes.

    For 12 servings without frosting this is 111 calories 25 carbs and 0 fats. The recipe counter says 1 gram of sugar but I don't think that's right. It is probably more like 18 grams of sugar per slice.

    The kicker is the frosting - here is the buttercream recipe my sil gave me:
    Silk - Light Soy Milk, 32 oz 240 24 6 24 4 500
    Butter - Unsalted, 0.5 cup 814 0 92 1 0 12
    Sugars - Powdered, 1 cup unsifted 467 120 0 0 0 1
    Hersheys - Unsweetened Cocoa Powder, 0.67 cup 107 32 5 11 21 0
    Mccormick's - Pure Vanilla Extract, 1 tsp 12 1 0 0

    Soften butter, mix in milk and vanilla then add sugar and cocoa. This has 15 g carbm 11 grams of sugar, 137 calories, 3 g protein and 9 grams of fat.

    This is a very yummy and easy to make cake - but high in sugar and definitely only something to have as an occasional treat - like a birthday!

    I now have 3 recipe options to try... I also found a chocolate bunt cake in my Light & Healthy Cookbook.
    The only problem is I don't really want to test them, because then I will be eating chocolate cake!
  • Eatingwell.com had a good article or whatever you want to call it with a bunch of chocolate cake recipes. I made the one bowl chocolate cake and it was dense and delicious! I made it with regular sifted whole wheat flour insted of buying whole wheat pastry flour and it turned out great. Warning... I am not responsible for your craving chocolate cake after clicking this link. I had to make the chocolate cake the night I looked at it, but the stats are really reasonable and the serving size is plenty big enough to kick the craving.

    If the lick I took from the spoon is any indication of how good this will taste, it should be fabulous. And LESS than 150 cal per slice, well if my husband can't tell its low cal, I sure wont!! :tongue:
