Quinoa Stuffed piquillo peppers

*preheat oven to 350 degrees

1/2 onion diced red or yellow
1/3 c.chopped mushrooms (I use cremini)
1 tbsp finely chopped garlic
1/2 c. drained diced tomatoes
1/2 lb ground turkey
1. c cooked quinoa
3/4 c grated cheese (your choice..I like a smoked cheese blend from TJ'S)
2-3 jars piquillo peppers rinsed drained..(I blot them with a paper towel..)

sautee onions, garlic, mushrooms..together in a bit of olive oil... then set aside in a bowl...
Cook turkey and drain... add cooked turkey and sauteed onion mixture back in pan..add drained tomatoes..stir, remove from heat..add cheese...stir...
Stuff mixture into the peppers..bake for about 15 minutes or until peppers are hot.
(you can also prepare mix) and stuff peppers and store in fridge to bake later on..

* if you cannot find piquillo peppers, just use whatever peppers you like... the stuffing is good in zucchini as well.

    I LOVE quinoa... pretty much the staple grain here in my house.... always trying to find things to do with it... :)
