Leek, wakame and sausage soup.

Leek, wakame and sausage soup...

Sounds strange, but is super easy to make and so good!
Its my take on an italian wedding soup. the wakame takes the place of spinach while adding a natural saltiness to the soup.


2 stalks leeks, chopped (green and white
6 large cloves of garlic pressed or minced
2 large boxes potato leek soup ( I use Imagine)
1 box chicken stock
red pepper flakes to taste
1.5 (more or less) Garlic-basil chicken sausage (removed from casing) ( I find @ whole foods at meat counter) (you can use whatever fresh sausage you like.)
3/4 c of wakame flakes or whatever seaweed/kelp blend you like..

sautee leeks, garlic,pepper flakes and sausage till sausage is cooked and leeks are softened..
add soup and stock
simmer...add wakame...
simmer till wakame is soft...
