Pasta with Ricotta stuffed Mustard leaves YUMMY
I made this last night for my family and it was great. Very filling and only 500 calories.
This is for one person so you would just add more for others.
3 medium mustard or chard leaves. ( i used chard) Cook in boiling water for just a min.
remove and take off the thick stem up to the leave.
Mix:
1/2 cup fat free ricotta
1/4 cup corn
1/4 cup diced red pepper
add what ever seasonings you like
divide the mix between the 3 leaves roll them up tucking in the sides.
place in baking dish with 3/4 cup marinara sauce
bake 350 for 20 min
serve over 1 cup whole wheat pasta
