Okay, I know what you are thinking... spinach? Being awesome? I personally was a little worried about trying to cook fresh spinach. I've only had it either raw or heated up out of a can. But I promise you, if you have never tried cooking fresh spinach, you are missing out! It is so green and healthy-looking, and truely delicious! Here's the simple recipe:

"Italian-Style Spinach"

10 ounces fresh spinach
1 clove minced garlic (or 1 tbsp minced garlic out of the spice jar, which is what I used)
4 tbsp olive oil or vegetable oil
1 fresh lemon, squeezed

Combine the garlic and oil in a large frying pan. Add all of the spinach and cook over medium heat for ten minutes. Add the lemon juice. Serve warm.

I don't care how little cooking experience you have, you can make this! This side dish cost me $2.50 (I already had garlic and oil at home). I didn't add vinegar to it, because I thought the lemon juice added the right amount of tanginess.

I love spinach. I like it like that with a slice of turkey bacon in it as well....when you saute everything, you fry the bacon in as well, and to save on calories, cut the oil, just use spray, or 1 tbsp of oil.....
