i have 11 carbs and 99 protein left and no good plan for supper. i have no groceries in the house besides asparagus, blueberries and frozen spaghetti sauce, so it's pretty much a blank slate. since i have to run to the market away, give me your protein-packed supper suggestions. :)

p.s. i also have two kids sick with the flu.

My protein packed lunch of the week -- 6 to 8 oz of chicken tenders (cooked in a little olive oil and tbsp of orange juice) served over 2 cups of baby spring mix lettuce with homemade balsamic vinaigette (1/4 cup balsamic vinegar, 3/4 cup olive oil, zest of 1 lemon, 1 tbsp lemon juice, 1 clove garlic). About 50 grams protein, 10 or so of fat from the vinaigrette and carbs are whatever other veggies you add on to the salad. Oh, and one day I sprinkled some chopped peanuts or almonds on for even more good fats/protein. I find that balsamic vinaigrette too oily too, so I'll probably cut back on the oil next time.

Jennie-o Hot Turkey Sausages! I made it yesterday with Whole Wheat Pasta and Tomato sauce, TONS of protein and kept me full all night!

    Low carb pad thai!

Seriously, I love this. It's a hungry girl recipe, but I slightly modified it because I'm afraid of those "no cal" noodles they love so much.

Sauce: They basically mix ketchup, lime juice, garlic, and some other stuff in to make theirs, but I just find it easier to buy a package of pad thai seasoning, and make my own.

-half packet of pad thai seasoning (It's a little sugary, so I only use half)
    - 1/4c lime juice
    - 2 or 3 tbsp olive oil

Just mix up all 3 really well.

    Other stuff:

Scramble a bunch of eggs, and cook some chicken breast/ tofu/ shrimp/ whatever you like. (I'd probably do egg, chicken, and shrimp to get your protein up)
Sliced peppers, onions, and any other veggie you feel like including
A bag of fresh bean sprouts

Just saute all of the veggies and meat together, except the bean sprouts, until cooked. Add sauce and bean sprouts. (I'd definitely use the whole bag if you're serving a family) I use loads to replace the noodles altogether. Toss until sprouts are tender and sauce is well mixed in.

This is pretty vague but you get the idea. It will sort of depend on how many you're serving and such. You can add cilantro and chopped peanuts on top if you like =)

    Hope your kids feel better!
