Lunch Ideas?

I really need some easy yet filling, low calorie lunch ideas. I have a home based daycare and don't want to eat what I make for the kids. They have a healthy diet of soup, sandwiches, nuggets, fries, pasta, veggies and stuff like that. PLEASE HELP! My lunches end up being my largest calorie load of the day. Thank you in advance for your wonderful suggestions!!

you could pre-make something in the evening for the next days lunch. Maybe broiled skinless chicken over a bed of salad greens with cucumber and cheese. Or whole wheat bread with peanutbutter with apple. Hope this helps.0

I enjoy making wraps for lunch. Yesterday I had a wrap with chicken, veggies, and low fat cheese. It was super easy and fast. I bought the chicken that is already make and cut up so all I had to do was microwave it for about 30 seconds.0

I to run a daycare and some of the ideas I have that are easy are. Each week I cook a bunch of chicken and use it for quesadillas with salsa and lowfat motzerella cheese. another idea is to take a whole wheat tortilla put it in the oven on 400 for 2 minutes on each side. Put 2 tbsp low sodium,low carbs bbq sauce and add motzerella and chicken with onion. Alot of my sucess comes from prepping food at the beginning of each week. ziplocs of cut up celery, or carrots. I got the biggest loser cookbooks and that gave me a ton of ideas as well.0

I like to have two egg whites, onions, peppers, ham and pepper jack cheese. or sometimes a laughing cow cheese wedge. sandwhich thins with peanut butter, and a fruit.0

I really like wheat thins, honey turkey and some type of fruit. A sandwich with low cal bread is good as well. Wraps are divine! Salads, healthy leftovers from the night before, turkey burgers,...0

I also do in-home child care. Usually I serve the children the leftovers from our family supper the night before (which I eat at supper-time by portioning and weighing my food). But for lunch I don't eat with the children just because it's a very busy time of day, so I usually don't eat my lunch until they are all down for a nap.
ANyways....I like to keep things like feta cheese, fresh veggies (peppers, cucumbers, onion etc) on hand as well as pita pockets or small corn tortillas. All that makes a fabulous lunch "sandwich" or wrap. I also do a lot of cottage cheese with fresh fruit. Check out my diary sometime....maybe you'll get some ideas. I try to stay fairly "vegetarian" at lunchtime so that I can indulge in a piece of meat for supper.0 -
WOW! Thanks everyone! I will certainly give a lot of these ideas a try. I get bored with my same old things every day so it'll be great changing it up!
