Vegetarian Mom of One...

Hi everyone, I'm new to the site, and I absolutely love it! I have always been the chubby girl, throughout school, and reaching a high weight that scared me senseless has made me decide its time to change. My son is now 5 months old, (today actually :) ) and I want to set a good example for him. I haven't eaten any meat since Christmas 2010, and I've been a vegetarian off and on for years. Since my son was born I have lost almost 60 pounds. If anyone has any good meat free recipes I would love to have them! :)

    The Vegetarian Times cookbook & website are great. I also modify Cooking Light recipes.

    Welcome to MFP! It's a great site. I have lots of vegetarian recipes that I love. I make a ton of things with mushrooms. My fave is mushroom burgers. Marinate portobello mushroom caps in olive oil and balsamic vinegar (make sure to remove the stem and gill stuff). Grill for a few minutes, we chop up tomatoes and sliced mozzarella cheese, put where the stem was and make sure the cheese is melted, serve on a sandwich bun. Yum!

    I get a lot of recipes from eatingwell.com they have a lot of great recipes, the ricotta cheese and spinach stuffed mushrooms is a favorite too, and the Philly "Cheese steaks" I will request you as a friend, feel free to look at my food and ask me any questions if you have any!

    When I became a vegetarian, "The Vegetarian Family Cookbook" by Nava Atlas was a lifesaver for my family and me. It provides a range of recipes for soups, casseroles, sides, salads, dressings, snacks, wholesome baked goods, lunch ideas and more.

    Besides the variety, the recipes are uncomplicated with easy-to-find ingredients. They're healthy and delicious with dairy and vegan options. The author even provides nutritional analysis for each recipe as well as menu suggestions. I highly recommend it. (Check out her website @ http://www.vegkitchen.com/)
