    Yum!! Hey, and what to do with those extra graham crackers is this:

    Mix 1/2 cup canned pumpkin (not pumpkin pie mix) with 1 tbsp (or less, just sweet enough to taste) agave nectar or honey, and a couple dashes of pumpkin pie spice. Warm it in the microwave for about 30 to 45 seconds (or eat it cold if you want it, it's still good)

    Then sprinkle 2 tbsp graham cracker crumbs onto the pumpkin and top with 2-4 tbsp fat free cool whip.

    Freaking amazing and FILLING dessert or snack for 150 calories. It's super filling cuz of the fiber and could probably be used as a small meal as well.

    That sounds awesome! I can imagine it kinda of being like a pumpkin pie,ohhh ideas! lol
  • Thanks for this recipe!!! I tweeked it a little to work with what my family likes...I added blueberries from a fruit naturals cup and about 1/8 cup splenda to the filling and they turned out Awesome!!! Thanks again, I look forward to trying different fruit with this recipe!

    These little babies are how I get over my cheesecake cravings!

    5 Graham Cracker Planks
    1 1/2 Tbs Coffee Creamer (I used Baileys Irish Cream Creamer)
    1/2 container Fat Free Cool Whip
    1/2 block Fat Free Cream Cheese
    1tsp Vanilla Extract
    Mini Muffin/Cupcake Liners

    Turn your graham crackers into crumbs with a food processor and then add 1/2 tbs Coffee creamer. Use food processor to blend together. Should be wet enough to push down and keep its form.
    ake Bites and are about 72 cals a piece!

    ok I am being a pain but I need to get this right dammit.

    what are graham crackers?
    fat free cool whip? Is this basically spray can cream? How big is the container?
    How much is half a block of fat free cream cheese?

    You do not have graham cracker pie,nor graham cracker crusts on some pies ...like banana cream pie or chocolate cream pie? Are all your pie crusts a flour/shortening "regular"crust?

    You could crush vanilla wafers or shortbread cookies and get similar results, just adjust calories for what you use.

    Is the coffee creamer used to keep the crumbs together?

    If so, can I use light margarine or milk instead? We don't drink coffee so I don't see a reason to buy the stuff for a recipe. I have a couple powdered coffee mate packets lying around from hotel stays but I think you are referring to liquid.

    I'm going to try skim milk then. Also, I'll add about 1 tsp of sugar-free tam on top for ascetics and taste.
