Mashed Cauliflower
One of my favorite things is mashed potatoes, but this is a good low-carb alternative. I know that this recipe has probably been posted, but maybe mine is a bit different?
1 Head of cauliflower
1/2 Cup Cheddar Cheese
1/4 cup milk
1 teaspoon butter
Salt to taste
Boil the cauliflower until soft, puree it in the blender until it resembles mashed potatoes. Add in your butter and milk and stir, then add your cheese. Heat it in the microwave to make sure that the cheese melts into it properly and stir it all up together. Add Salt to taste.
This is a fairly low-calorie dish and sometimes I have it as a meal. You'll have to work out how many calories it is based on the serving, your ingredients, etc, but it really lovely, especially if you need that wholesome fix. Sometimes I'm super hungry and I can eat all of it, and mine usually works out to about 485 calories, which isn't bad. Cheers!

I love mashed cauliflower too. I make mine a little different, but I am sure it tastes basically the same. YUMMY!!!0

Wow good idea...I currently use cauliflower instead of rice, I blitz it up in the food processor until its all crumbly heat it up and have it with curry or stir fry!0

I like to take my cauliflower and mash it up with a fork then add salt and pepper to taste, then some parmesan chesse. You dont need a lot of cheese at all and it is very yummy!0
