Mexican Salsa Fat and Sugar Free

4 lg firm tomatoes skinned & de-seeded
1 fresh green squat chilli de-seeded (this type wont be too hot)
1/2 medium red onion
chopped fresh coriander 1 teaspoon full
Juice of one lime
fresh ground black pepper
Optional salt to flavour

Finely dice all ingredients mix and add lime juice- season as required

chill for 1/2hr to infuse


If you prefer a bigger kick add a splash of Tabasco
