Omlette just 127 calories

I have just made a delicious aubergine (eggplant) omlette for my lunch:

Ingredients:

Fry light
1/4 of an onion (15 cals)
100g (half whole) aubergine (eggplant) (16 cals)
1 medium egg (88 cals)
2 egg whites (8 cals)

Total calories 127


1. Spray small frying pan with fry light and place on low heat.

2. Slice onions and aubergine into fairly thin slices and place in pan.

3. Add 2 egg whites to 1 whole egg with a pinch of salt and pepper. Whisk and add to pan once aubergine and onions have cooked.

4. Continue to cook on low light and to finish the top, place under a grill for a couple of minutes and hey presto.

I like to serve with mayonnaise. You can change the aubergine for peppers or mushrooms if you like. Personally I don't bother counting the egg whites, onion, mushrooms, peppers as there is barely anything in them.

I like to have this for lunch if I am having something big for dinner or if I'm off out for the evening as it is really low in calories!
