Nut Loaf (Vegetarian Style "Meatloaf")

Nut Loaf
6 servings

Ingredients
8oz mushrooms, finely chopped
1 onion, finely chopped
1 leek, finely chopped
2 garlic cloves, minced
1 cup mixed nuts, finely chopped
1 can of lentils
½ cup flour
½ cup grated cheese
1 egg, beaten
3 tbsps herbs (I use 2 tbsps Italian seasoning, 1 tbsp sage)
Black pepper

Directions
1. Combine mushrooms, onion, leek, and garlic in a saucepan and simmer on medium heat for about 10 mins, until soft.
2. Combine remaining ingredients until the mixture looks even, cheese is melted, and the flour has disappeared.
3. Put mixture into a greased oven pan, and bake at 350 for 50-60 minutes.
