Spaghetti Squash with Smoked Turkey Sausage

14 oz Butterball - Everyday Turkey Smoked Sausage, cut into bit sizes
2 cups Great Value - Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/2 cup Green Onion - Raw, chopped
4 oz Bel Gioioso - Parmesan Cheese Hard, grated
1 tbls Spice World - Minced Garlic
1 tbls McCormick Parsley Flakes
2/3 tbls Great Value - 100% Pure Extra Virgin Olive Oil
1 can Walmart Great Value - Mushrooms Pieces & Stems, drained
24 oz Bertolli - Spaghetti Sauce - Organic Olive Oil, Basil and Garlic
8 cups Fresh Farms - Spaghetti (Winter) Squash, approx 1 med squash
Directions:
Preheat oven to 350 degrees.
Cut squash in half lengthwise & scoop out the seeds. Put the squash, cut side down in a baking pan and add 1/2" of water to pan. Place squash in oven & bake for 1 hour. Remove from oven and let cool until you can handle the squash without burning your hands. With a fork, scoop out flesh and use a spoon to remove all of the left over flesh. Set a side.
In a skillet, heat olive oil and saute' onions. Add garlic, parsley, mushrooms, spaghettis sauce and cut up sausage to the skillet and heat.
Once all is heated, place cooked squash in a deep dish baking dish and add mixture in skillet plus the mozzeralla cheese and stir all together. Place in oven and cook another 15 minutes.
Remove baking dish from oven and top with the parmesan cheese and put back in the oven for 5 additional minutes.
Enjoy!!!!! Excellent with a piece of garlic bread.

Thanks for sharing. I usually have spaghetti squash at least once weekly with Turkey Meatballs and one of the Classico sauces. Delicious! I don't miss pasta at all.0
