So this weekend is my bridal shower which is also a luncheon. After the luncheon though, we will probably have some family over to my parents house. Since it will be several hours later, my mom was going to have some easy main food in a crockpot, but we also want to have some "finger foods"/ party foods to have arounch for people to snack on as we mingle. Several of us, my fiance, mom, mom-to-be... are watching our calories and weight so I am looking for some good ideas for healthier options of snacks (besides the obvious veggie tray) that would also be able to either be made ahead, or have easy prep and can be done while company is over.
Ideas???

I've made variations on these spinach stuffed shells: http://www.cooks.com/rec/view/0,1926,159167-247197,00.html

I use pureed tomatoes without salt added, so it's very low in sodium. I use minced garlic, and no onion because I prefer garlic to onion. I don't add salt, but I do add a hefty amount of Italian Seasoning. And low fat Ricotta cheese, part skim Mozzarella. I don't think the Parmesan is even necessary, or at least not a full cup of it.

i found this really helpful website for you: http://cheaphealthygood.blogspot.com/2008/01/cheap-healthy-party-food.html

the author culled recipes from different sites that met certain criteria. there are lots to choose from!

if you like asian food, i'd recommend vietnamese summer rolls w/ shrimp, served with a side of satay sauce and a bit of siracha. super healthy, refreshing, and yummy!

You could try mini turkey sandwiches or wraps. There is always raw almonds. Or you can get some special k crackers or wheat thins and top them with laughing cow cheese and little chunks of veggies like tomatoes or chopped green onion.

Definitely make or buy hummus as a dip for the veggies. You can make miniature turkey meatballs as well with a low sodium marinara dipping sauce.
