I wonder how much difference it would make to replace the eggs with applesauce, bananas, or water + flaxseed?

    Why Flaxseed?

I can see replacing the eggs with applesauce but what for flax?

Ground flaxseed mixed with water makes a pretty good glue for sticking recipes together without eggs, and has some good fats and protein in there, too.
