Southwest Goulash

I made this for dinner last night and it was a huge hit! I found the recipe in my Taste of Home Diet Comfort Foods cookbook. Having it for lunch today and it is even better second day.
1 Cup uncooked elbow macaroni (I used whole grain mini penne)
1 # lean ground beef (90% lean) (I used extra lean ground turkey)
1 med onion, chopped
2 Garlic cloves, minced
1 can (28 oz) diced tomatoes, undrained)
14 oz water (optional)****
2/3 Cup frozen corn
1 can (8 oz) tomato sauce
1 can (4 oz) chopped green chilies
1/2 tsp ground cumin (I added more)
1/2 tsp pepper
1/4 tsp salt ( I left this out)
1/4 cup minced fresh cilantro (a very nice addition)
Fat free cheddar cheese shreds
Light Sour Cream
Cook macaroni according to the package directions. Meanwhile, in a Dutch oven over medium heat, cook beef, garlic and onion until meat is no longer pink; drain. Stir in the tomatoes, corn, tomato sauce, chilies, cumin, salt and pepper. ****(I added about 14 oz of water, cleaning out tomato cans, it seemed too think) Bring to a boil. Reduce heat; simmer uncovered, for 3-4 minutes or until heated through
Drain macaroni; add to meat mixture. Stir in cilantro and heat through.
We topped ours off with Fat free shredded cheddar cheese and a dollop of Light sour cream. It was so good and so filling.
Nutritional Facts: 1 1/3 Cups=224 Calories, 6 g fat (2 saturated fat) 37 mg cholesterol, 567 mg sodium, 24 g carbs, 4 g fiber, 19 g protein.
Cheese and Sour cream not factored in.
