Gluten-free recipes and suggestions

I'm just starting to go gluten-free and am feeling a bit lost. I'm hoping some people with celiac or gluten intolerance might want to share some recipes/tips with me. Right now I'm sticking to protein, rice, fruits and veggies, but I'm pretty sure I'll want some more variety pretty soon. I did find an amazing gluten free almond butter cookie recipe. It tastes like a regular cookie!

    E-Mealz has the option for gluten free menus. It cost 5 dollars a month but gives you the entire weeks worth of recipies, shopping list, and how much it will cost. I use the fat free version and not only is it easier to plan meals (i don't even have to think about it anymore) it has saved me a lot of money. Just google E-Mealz and they have sampel menus you can look at. :)

    i believe quinoa is gluten free.. have seen several delicious recipes for using it here in recipe section

    Thanks for the suggestions! I'll look into E-mealz. I'm pretty much just cooking for 1 or 2 but I like to cook something and be able to eat leftovers for a couple days.

    Shelley--I have a box of quinoa that I've been meaning to try, the last time I had it was immediately preceding a bout with the stomach flu so I haven't been able to eat it in a few years lol!
  • Do you have celiac or are you just eliminating gluten from your diet? My husband has been diagnosed with celiac for almost 4 years now and we have pretty much modified every meal he used to eat with a gluten free version. I would suggest you speak with a dietician if you can. Our grocery store has one on staff and she went through all the products he could eat.
    There are lots of pastas, breads, crackers, etc that you can have. I recently found Bisquick makes a gluten free mix and their website has lots of recipes. I haven't found a cook book I've really liked, so I don't know if it is worth spending the money on one, especially if you are like me and like meals that are quick and easy!

    I was tested for gluten intolerance (blood test) yesterday so waiting to see, but in the meantime am eliminating gluten. From the reading I've been doing it seems like to actually be diagnosed with celiac versus gluten intolerance you have to have an intenstinal biopsy? I don't have insurance so couldn't go to a GI specialist to do that, but a gluten intolerance diagnosis will be fine with me, same treatment either way. There actually is a dietician on staff at the free Indian clinic I go to, that is a great idea, thank you!

    I definitely like quick and easy meals! I checked out a few cookbooks from the library to see what I could find.

    Amazon.com actually has a lot of gluten free stuff if you have a hard time finding stuff where you live. The cookbook "1000 Gluten Free Recipes" is really good. Even has a Buche De Noel recipe.

    Thanks for the links! I'm actually pretty lucky to live in Portland, home to Bob's Red Mill and lots of great grocery stores with lots of gluten free options.
