Help! I need more calories

I went under my calories yesterday (I get 1200/day) and it looks like I might again today. I know I need to have at least 1200 but I can't seem to figure out what to have for dinner without going way over my carbs while meeting my calories. I need 375 more calories with only 47 carbs. Any ideas would be appreciated, thanks.

    Big salad with chicken. Grilled/baked chicken breast with veggies and/or side salad. Soup.

    If you are planning on having a sandwich, I would go without the bun and instead wrap your burger or chicken in a lettuce-wrap. You can also eat peanut butter, almonds or eggs which are relatively low in carbs but contain a good amount of calories.

    Thank you for the great ideas. I didn't have any unfrozen chicken breast and no fresh lettuce so I went with tuna and a few sociables. I met my goal and stayed under my carbs! I did find that tuna with some peppercorn and Italian seasoning has a great flavor.
