For Those Of You Who Like Tuna Melts....

I'm getting reeeeeally good at these Flatout recipes! I love tuna melts and I came up with a healthy (NO BUTTER!!) variation with a lot more good-for-you ingredients:

1 Flatout Multi-Grain w/ Flax flatbread
1 can Starkist Chunk Light Tuna in water
1 Tbsp Mayo
1/4 each Red, Yellow & Orange Bell Pepper, julienned
1/3 cup shredded cheddar
2 Tbsp Black Olives
1/2 c. shredded lettuce

Put the flatbread (lightly oiled on both sides) directly on the rack in a preheated 350* oven for 7 minutes. Remove from oven and spread tuna on. Top with peppers, olives and cheese. Replace in oven for 5-7 minutes, until cheese is melted. Remove from oven, top with lettuce and enjoy!

    I LOVE tuna melts!! My weakness is Subways, had it today for lunch =( but this recipe looks yum!

    It was sooooo yummy!! And Lexie, I also have a weakness for Subway's Tuna Melts! I'm not really a fan of anything "multi-grain" or "whole wheat", etc. But when it is crisped up in the oven, it's really not that bad! I also added jalapeno rings to it but I didn't include it here because it added A LOT of sodium and I know how concerned most people are. But it added just enough "bite" to make it that much more enjoyable!!
