Peanut Butter Oatmeal Cookies
These little guys are about 35 calories apiece. Just grab one or two to take the edge off.
1/2c. peanut butter
1/2c. oatmeat
1/4c. honey
1 egg
1 tsp. vanilla
1/4 tsp. cinnamon
dash salt
Preheat oven to 325. Use parchment or Silpat if you can, peanut butter burns easily. Otherwise, check bottoms often.
Mix together all ingredients.
Place by teaspoon onto cookie sheet about 1" apart. Press with fork to slightly flatten.
Bake for 7-9 minutes, checking bottoms often.
These are not the OH MY cookies you have for the Holidays, but good for a quick snack fix.

Have you ever tried Agave nectar? I am no fan of honey but Agave is okay.
Though keep in mind that when you cook all the ingredients together you most likely won't taste the honey at all. It's really just there as a sugar replacer and a binding agent.0 -

For the hater of honey: Instead of honey, use sugar. You don't really taste the honey however, it just adds the sweetness, and a bit healthier. When using sugar, use the same amount of sugar as peanut butter. Calorie count goes up and higher on GI.0

I get about 25 from this recipe. So, divide the total calories of the ingredients by 25, and voila. Somewhere around 35-40 according to size for the recipe with honey. Do the same calculation using sugar; you'll get calories per cookie for that recipe, too.0

Use Agave syrup. It's has the same texture as honey on no taste. Please it is really good for people with diabetes.0
