I borrowed this recipe from a local fast food restaurant, that no longer makes this tasty sandwich. Of course, I tried to make it healthier.
Ingredients:
4 to 6 Asparagus Spears
2 slices Whole grain bread
1 to 2 Tomato slices
2 slices Low fat part skim Mozzarella cheese slices
Smart Balance Light buttery spread
1 Garlic Pod

1) Bring a pot of water to a boil. (you can add salt to the water if you like) Add Asparagus, and cook for 4 to 6 minutes depending
on the thickness of the asparagus. You don't want to cook the asparagus more than 60%. Once the asparagus is ready,
drain it, and put it in a colander. Place it under cold water in the sink to stop the cooking process
2) Mince the garlic. Then combine the minced garlic, and 1 tbsp Smart Balance light in a bowl.
3) Assemble the sandwich. (bread, cheese, tomato, asparagus, cheese, bread) Use the garlic, smart balance mixture on the
outsides of th bread.
4) Cook on LOW heat, (the garlic will burn if you rush this process) in a skillet or George Foreman grill until the cheese is
meted. Flip he sandwich if necessary.
