Variation on Shepherds Pie

Here is one I have cooked up.....

2 medium carrots
4 small onions
1 cup mushrooms
1 small chilli pepper
500g Quorn mince
1 pint stock (1 oxo & top with water - I used lamb oxo)
1 Celeriac Root

Cook Quorn then onions and then the rest whilst boiling 1 celeriac for about 15-20 minutes, then mash it up with another small chilli pepper. Throw the mince mixture into a lasagne type dish, throw the mash on top and bung in the oven (mod hot) for about an hour.

Assuming this makes 8 portions the stats of this weigh in at about 120 calories per serving.

Note that the celeriac root is a good replacement for mash potato and also tastes really good. Then also replacing the lamb mince with quorn cuts the calories in half as well.

    Forgot to mention - I throw in some Ginger & garlic to spice things up a bit, but just experiment, its down to your own taste buds really.
