Irish Desserts
I am posting two Irish Desserts that were requested.
IRISH SHORTBREAD (32 triangle cookies)
1 cup butter, softened
1/2 cup confectioner sugar
BEAT THESE TOGETHER UNTIL CREAMED
1/2 cup corn starch
2 cups flour
MIX TOGETHER
1. Work the flour mixture into the butter mixture a little at a time; knead (might be crumbly)
2. Divide into two equal parts and press each part into an ungreased 8" round pan.
3. With a fork, perforate a spoke pattern so that each round has 16 sections.
4. Bake at 300 for 45-60 minutes. The edges will get golden, be careful not to burn.
5. While still warm, sprinkle tops with a little sugar.
6. After cooling, score the perforations with a knife and the rounds will break apart giving you 32 cookies.
Each cookie @95 calories.
IRISH JIG DESSERT (so easy and so yummy!) makes 8 1/2cup servings
Cool Whip Free - 1 tub thawed
8 Archway coconut macaroon cookies - processed into crumbs
2 TBs good whiskey
1. Put cool whip into bowl and mix whiskey in well.
2. Fold in most of the macaroon crumbs....save some for topping
3. Divide between 8 dishes
4. Sprinkle with saved macaroon crumbs.
