I have a few bananas, they are getting rather ripe! I would love to make a bread from them. I do not have a recipe, and can find one online I'm sure, but if any of you have a recipe that offers a tasty bread that is a good choice for weight loss, please share!

I know that as a dessert, banana bread will never really be a good choice. But maybe there are some substitutes I can sneak in to lessen the 'badness' of it all :smile:.

    I can't vouche for it, but I just snagged it from allrecipes.com, a great site for recipes in general.

    Original Recipe Yield 1 - 8x4 inch loaf
    Ingredients
    1 1/2 cups all-purpose flour
    3/4 cup white sugar
    1 1/4 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    2 egg whites
    1 cup banana, mashed
    1/4 cup applesauce

    Directions
    Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
    In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
    Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

  • The bisquick recipe is pretty tasty, but it is 195 calories a slice. If you want to lighten it up a little then substitute applesauce for the oil. This recipe is very tasty.

    Ingredients:

    1-1/3 cups mashed very ripe bananas (2 large)
    2/3 cup sugar
    1/4 cup milk
    3 tablespoons vegetable oil
    1/2 teaspoon vanilla
    3 eggs
    2-2/3 cups Original Bisquick
    1/2 cup chopped nuts
    Preparation:

    Heat oven to 350°. Grease bottom only of loaf pan, 9X5X3 inches
    In a large mixing bowl, combine all ingredients except Bisquick and nuts; stir until blended. Stir in Bisquick and nuts. Pour into prepared loaf pan.

    Bake banana nut bread for 50 to 60 minutes, or until toothpick inserted in center comes out clean; cool 10 minutes. Loosen sides of loaf from pan and remove to wire rack to cool completely.

    High Altitude (3500 to 6500 feet): Heat oven to 375 degrees. Use 1/2 cup sugar and 1/3 cup milk. Omit oil. Bake banana nut bread for 55 to 60 min.

    1 slice: Calories 195 (calories from fat 80), Fat 9g (Saturated 2g), Carbs 26g
