butternut squash... what is it??

Hey All

Is butternut squash like a potato? or is it more veggie.

Cause i am making butternut squash fries tonight.. and want to know if i should think of it as a carb or a veggie!

    it's veg but all veggies are carbohydrates. Squash is not a starchy carbohydrate like potatoes though.

    Not sure what you're asking--if you enter it in your food diary, it will give you the breakdown on the various carbs, sodium, fat, etc.

    So, I"m not sure what you mean by treating it as "a carb or veggie"?

    that is what i meant.. is it starchy like a potato or sweet potato? i made the squash fries last night.. they were good!!

    it makes a lovely thick soup - I know I know not winter yet but it really is easy and tasty !
